Here are a few more recipes. All of these were contributed by Molly. She warns that the Chicken Pasta Salad is super delicious but not very healthy because of the mayonnaise. I'm not usually one to eat pasta salad, but I did have a friend recently say they substitute Greek yogurt for mayonnaise in their pasta and chicken salad recipes to make it healthier!

Broccoli Slaw
1 lb. broccoli slaw
1 bunch green onions
1 c. sunflower seeds
1 c. sliced almonds
2 pkg. chicken ramen noodles, crushed
Dressing:
3/4 c. oil
1/2 c. sugar
1/3 c. white vinegar
flavor packets from ramen noodles
1. Mix first four ingredients of the slaw.
2. Mix dressing and pour over slaw.
3. Add noodles 1 hour before serving.
Roasted Potatoes and Asparagus
1/2 c. Italian dressing
1/3 Dijon mustard
2 lb. small red potatoes, unpeeled, quartered
2 c. cut-up fresh Michigan asparagus
2 c. grape or cherry tomatoes, cut in half
1/3 c. sliced green onion
1. Preheat oven to 350 degrees.
2. Combine Italian dressing and mustard until blended.
3. Toss 1/4 c. dressing mixture with potatoes in a medium bowl.
4. Spray 15x10x1" pan with nonstick spray; arrange potatoes on pan.
5. Bake 20-25 minutes, remove from oven, and add asparagus to pan.
6. Continue to bake 10-15 minutes or until potatoes are tender when pierced with a fork
and asparagus is lightly browned.
7. Put potatoes and asparagus in large bowl, stir in tomatoes, green onion, and remaining
dressing mix.
8. Serve warm or at room temperature.
Chicken Pasta Salad
2 c. mayonnaise (possible substitution: Greek yogurt?)
2 envelopes ranch dressing packets (Hidden Valley)
2 c. buttermilk
1.5 lb. chicken breast
1 lb. Vermecelli, cooked
2 c. chopped celery
12 green onions
1.5 c. green pepper (chopped) or peas
1. Mix the mayonnaise, ranch packets, and buttermilk the night before and let sit.
2. Cook the chicken in a pan.
3. Combine dressing and remaining ingredients.
